Garlic mushrooms with Zinio white wine
A classic Rioja tapa
Simple, quick and full of flavour. The white wine adds freshness and balances the intensity of the garlic.

Olive oil and salt
Preparation
Sauté the sliced garlic in olive oil. Add the mushrooms and cook over high heat until golden. Pour in the Zinio white wine and allow it to reduce slightly. Finish with chopped parsley just before serving.

Pork cheeks braised in Zinio red wine

1 kg pork cheeks

1 large onion

1 carrot

2 garlic cloves

300 ml Zinio red wine

Olive oil and salt
Preparation
Brown the pork cheeks in a large casserole and set aside. In the same pot, sauté the chopped onion, carrot and garlic until soft. Add the Zinio red wine and let it reduce for a few minutes. Return the pork cheeks to the pot and cook gently over low heat until the meat is very tender and the sauce rich and concentrated.

Lemon peel
Preparation
Peel the pears and place them in a wide saucepan. Add the Zinio red wine, sugar, cinnamon and lemon peel. Simmer gently for about 30 minutes, turning the pears occasionally, until tender and deeply infused with the wine. Reduce the liquid until a light, aromatic syrup forms.

Ingredients

200 g flour

150 g sugar

100 ml Zinio red wine

80 ml olive oil

30 g cocoa powder

1 sachet baking powder
Preparation
Mix the dry ingredients in a bowl. Add the Zinio red wine and olive oil and whisk until smooth. Pour the batter into a greased cake tin and bake at 180 ºC (350 ºF) for 35–40 minutes, until the cake is light and springy.
